Method
Prepare the Ribs
- Remove the membrane from the back of the ribs for better flavor absorption.
- In a bowl, mix all the dry rub ingredients together.
- Rub the mixture generously over both sides of the ribs.
Preheat the Pellet Grill
- Preheat your pellet grill to 225°F (107°C).
Smoke the Ribs
- Place the ribs bone-side down on the grill grates.
- Smoke the ribs for 3 hours, maintaining the grill temperature.
Wrap the Ribs
- After 3 hours, remove the ribs and wrap them tightly in aluminum foil.
- Return the wrapped ribs to the grill and cook for an additional 2 hours.
Glaze and Finish
- Unwrap the ribs and brush them with BBQ sauce.
- Place the ribs back on the grill for 30 minutes to set the sauce.
- Check the internal temperature; it should be at least 190°F (88°C).
Serve
- Remove the ribs from the grill, let them rest for 10 minutes, then slice and serve.
