Ingredients
  

Tri Tip
  • 2 pounds tri tip roast trimmed
Dry Rub
  • 2 tablespoons paprika smoked or regular
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon brown sugar packed
  • 1 teaspoon black pepper freshly ground
  • 1 teaspoon salt
  • 1 teaspoon cayenne pepper optional for heat
Wood Chips
  • 2 cups wood chips hickory or oak recommended

Method
 

Prepare the Tri Tip
  1. Trim any excess fat from the tri tip roast and pat it dry with paper towels.
  2. In a small bowl, mix together all the dry rub ingredients until well combined.
  3. Rub the dry mixture all over the tri tip, ensuring it is evenly coated. Let it rest at room temperature for about 30 minutes.
Prepare the Smoker
  1. Preheat the smoker to 225°F (107°C).
  2. Soak the wood chips in water for at least 30 minutes, then drain them.
  3. Add the wood chips to the smoker according to the manufacturer's instructions.
Smoke the Tri Tip
  1. Place the tri tip on the smoker grate, fat side up.
  2. Smoke the tri tip for about 2 to 3 hours, or until it reaches an internal temperature of 135°F (57°C) for medium-rare.
Rest and Serve
  1. Remove the tri tip from the smoker and let it rest for 15 minutes before slicing.
  2. Slice against the grain and serve with your favorite sides.
