Ingredients
  

Gravy Base
  • 2 tablespoons Butter Unsalted
  • 1 medium Onion Finely chopped
  • 2 cloves Garlic Minced
  • 1 can Diced Tomatoes 14.5 oz, with juices
  • 1 cup Chicken Broth Low sodium
  • 1 tablespoon Sugar Optional, to balance acidity
  • 1 teaspoon Salt To taste
  • 1/2 teaspoon Black Pepper Freshly ground
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • 2 tablespoons All-Purpose Flour For thickening

Method
 

Prepare the Gravy
  1. In a skillet, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Stir in the flour and cook for 1-2 minutes to form a roux.
  4. Gradually whisk in the chicken broth, ensuring there are no lumps.
  5. Add the diced tomatoes, sugar, salt, black pepper, oregano, and basil. Bring to a simmer.
  6. Reduce heat and let the gravy simmer for about 10-15 minutes, stirring occasionally, until thickened.
