  • 1 pound flank steak
  • 1 ripe avocado, sliced
  • 1 cup sweet corn kernels
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon garlic powder
  • salt and pepper to taste

  1. Prepare the ingredients: Halve cherry tomatoes and slice the avocado into wedges. If using fresh corn, cut kernels off the cob.

  3. Cook the steak: Preheat grill or pan over medium-high heat. Grill steak for 4-5 minutes on each side until desired doneness. Allow to rest before slicing.
  4. Assemble the bowl: In a large bowl, combine corn, tomatoes, avocado, and cilantro. Drizzle with lime juice and olive oil; mix gently.
  5. Slice and serve: Cut the rested steak against the grain into thin strips and layer over the vegetable mixture. Drizzle with remaining dressing if desired.
