Ingredients
  

Vegetables
  • 2 cups cherry tomatoes halved
  • 1 large cucumber diced
  • 1 medium red onion thinly sliced
Dressing
  • 3 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly ground
Garnish
  • 2 tablespoons fresh parsley chopped

Method
 

Prepare the Vegetables
  1. In a mixing bowl, combine the halved cherry tomatoes, diced cucumber, and sliced red onion.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and black pepper.
Combine and Serve
  1. Pour the dressing over the vegetable mixture and toss gently to combine. Garnish with chopped parsley before serving.
