Ingredients
  

Vegetables
  • 4 cups yellow squash, sliced about 4 medium squash
  • 1 cup onion, chopped yellow or white onion
  • 2 cloves garlic, minced
Dairy
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 egg beaten
Seasonings
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
Topping
  • 1 cup bread crumbs
  • 2 tablespoons butter, melted

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, sauté the onion and garlic until translucent.
  3. Add the sliced yellow squash and cook until just tender, about 5 minutes.
Mixing
  1. In a mixing bowl, combine the cooked squash mixture, sour cream, cheddar cheese, beaten egg, salt, pepper, and thyme.
Baking
  1. Transfer the mixture to a greased baking dish.
  2. In a separate bowl, mix the bread crumbs with melted butter and sprinkle over the casserole.
  3. Bake for 25-30 minutes or until the top is golden brown.
